2005 Chateau St Hilarion - Cabernet Shiraz Prestige


Only a few cases remain of this classic vintage. This wine is very well structured with a perfect balance of fruit, acidity, alcohol and tannin.  Wonderful tones of cassis, raspberry and blackberry.

2006 Chateau St Hilarion - Selda Cabernet Shiraz


A firmer-styled wine with oodles of ripe fruit and classic rich structure. 2006 was a very ripe year and this wine is loud and very exciting.  Wonderful with Kleftiko and meats cooked in a rich sauce.  Drinking well now but will keep until at least 2012.

2009  Levant - White


Made in the St Hilarion winery from  selected local white grapes. The nose is gently aromatic and the wine medium-bodied with clean, ripe, soft fruit character. 

A very gluggable wine - the 2nd glass goes down even easier than the first! A perfect partner for fish, chicken and salads. Cracking value

2010 Chateau St Hilarion - Cabernet Rosé


The wine is 100% Cabernet Sauvignon. The grapes achieved excellent ripeness and came to the winery within an hour of picking. They were then crushed and given a short fermentation on the skins before being bled.  The rosé was fermented very cool, to give a delightful, gently aromatic wine.  The fermentation stopped just before  dryness, leaving a wine with balanced alcohol, fruit and acidity.  Lots of rose petal flavours, together with a melange of summer fruits. A great wine for sitting on the terrace with friends, or simply watching the world go by!

2009  Levant - Red


Made in the St Hilarion winery from selected local red grapes, blended with Cabernet Sauvignon from our own vineyards at Güzelyurt. 

The wine is light-bodied with gentle perfume and  lots of berry fruit character.  The tannins are very smooth making a very smooth, easy drinking wine.

Great with simple red meats and fuller flavoured poultry.

2006 Chateau St Hilarion - Eliz Shiraz Cabernet


From the very ripe 2006 harvest this wine made mostly from Syrah is amazingly rich,

vibrant and forward.  A nose showing a melange of herbs and spices, the fruit is concentrated and rich, with port-like tones. Well-rounded tannins.  Drinking delightfully now, the wine is a perfect match for simply cooked steaks.

2007 Chateau St Hilarion - Barrique Reserve Cabernet Sauvignon


Probably the finest wine we have produced to date.  Carefully selected Cabernet grapes from our own vineyards were crushed, fermented and macerated in vat.  The pressings were not used, but the free-run juice put into French oak barrels for sixteen months.  The traditional process included a fining with egg-whites.  Rich, with classic cassis tones and dark chocolate flavours.  The tannins are surprisingly silky and the wine shows great structure and length.

2007 Chateau St Hilarion - Barrique Reserve Syrah


The Syrah grapes used for this wine were carefully selected from the finest fruit from our Geçitkoy vineyards.  The vines were seven years old, and the fruit in perfect balance.  After a traditional fermentation and initial maturation in vat the wines was racked into French oak barrels for eight months ageing.  Further maturation took place in vat and bottle. The wine is classically structured with opulent red berry fruit and richness, together with a fascinating spiciness.  A very refined wine with tremendous length.

2008 Chateau St Hilarion - Cabernet Shiraz


Just released for sale, this well structured wine from the small but very healthy 2008 vintage. This wine has firm tannins that will combine well with high protein (but low salt) foods. Having spent 9 months in seasoned French oak barrels, there is a gentle toastiness that adds to the enchantment.

2006 Chateau St Hilarion - Murat Cabernet Sauvignon


This ripe year produced superb Cabernet Sauvignon grapes with all the classic tones – blackcurrant, blackberry, chocolate and leather. The wine is quite masculine, and has been matured in stainless-steel vat and bottle to retain maximum primary fruit. Drinking now - 2014

2007 Chateau St Hilarion - Shiraz
